I&#039;ve been experimenting with organic barley flour (not malted) and it&#039;s working fine.  1% barley flour in the formula is all it takes for me.

I do believe, though, that one can mix a small amount of not-organic-certified flour with the organic flour, and by US standards, at least, the bread can still be considered and labeled &quot;organic&quot; (just not &quot;100% organic).

		<description>It is difficult to find organic malted flours (I&#039;m talking about wheat flour with their FN adjusted at the mill with the addition of malted barley), but maybe not impossible, depending on where you live. Heartland Mills has one (UBAP) which I have ordered online but the shipping is very high so I wont be doing that again. I am able to buy an organic malted flour from Central Milling in my local Costco. Also, I can have a local natural foods store special order a 50-lb bag of Giusto&#039;s Golden Haven. You might call Giusto&#039;s and see who they have distributing their flour in your area.</description>
